Texas: Everything is Bigger. Part 1

We've reached the end of our two-month stay in south-central Texas and are starting back west. The last week and a half or so has been busy with trying to catch a few of the Texas highlights that we've missed, either because of weather or laziness.

Bills' BarBque in Kerrville, TX, is a highly rated BBQ stop in this part of the state. The building will send you back forty years or so (that's when the pit was last cleaned!), but the food is delicious. Our traveling friend Bill is a knowledgeable pit master and proclaimed this to be some of the best he's every eaten.  The fire is started at four in the morning in a well-used space.

Transferred to the pit, the hot coals do a magnificent job of creating smoke, as you can see on the wall decorations!

We've managed to stop at Bill's three times in the last month, and the food has always been excellent. The two ladies that run the place cut your order as you watch, allowing the customer to accept or decline certain cuts of brisket or ribs. They manage to provide hilarious entertainment while they work, chatting with customers and each other. The menu is pretty standard with the exception of smoked goat....if that's your thing.

We drove a bit east one day to visit Jacob's Well. This is an extensive underground cave system is tapped into the Trinity Aquifer, and at one time spouted water over six feet out of the ground. Today, extensive development has lowered the aquifer level , reducing the level of water flowing through the opening.

Along the road, near the town of Wemberly, we found a field of famous Texas Bluebonnets!
